Stuffed eggs (or also called mimosa eggs) are cold appetizers made from eggs cut lengthwise. They are filled with a mixture of semi-soft to hard egg yolk mixed with spices and mayonnaise. The composition and spiciness of the mixture varies from family to family.
If you want to prepare the eggs in advance, flip the eggs occasionally. This will ensure that the egg yolk is nicely placed in the center of the egg and prevent the filling from running out of the stuffed egg later.
How do you make tasty stuffing?
You first boil the eggs for at least 5 – 7 minutes, depending on the size of the egg. After peeling and cutting the egg lengthwise, remove the yolk from the egg with the knife tip of a potato peeler, for example.
Put the yolks in a container and mash the yolks with a fork. Add salt, pepper and mayonnaise and mix to make a tasty dish. Curry powder and chopped chives are also added.
When the mixture is flavored (taste it!) return it all to the cavity of the congealed egg white using a spoon. If you use a teaspoon for this, you can easily slide the mixture off the spoon onto the egg. Others also recommend using a piping bag but then you have to use pretty mayonnaise or butter. Sprinkle some paprika over the top.
You can also use a drop of ketchup or curry to add the red color as a garnish. This will add a festive touch to the whole. Small leaf of parsley on the eggs then finishes it off.
Cover with aluminum foil or a wet cloth and place in the refrigerator. If you do not cover them, they will dry out over time and the egg yolk will harden.
With fish
Stuffed eggs are surprisingly delicious with fish. Think smoked salmon or tuna. Mashing and mixing the egg filling is a good possibility but a nice piece of salmon as a garnish is not to be despised either. Try it!
Stuffed pink eggs in a jiffy
Want to put a fun twist on the standard stuffed egg? Then make stuffed pink eggs. Red beet, for example, gives the egg a festive color. This is guaranteed to steal the show! Great for Easter or during a birthday party. How do you do that?
Boil the beet for at least 15 to 30 minutes in a pan of water on a gentle simmer. Strain the cooking liquid so that only the colored water remains and put it back into the pan. Add the cold unpeeled eggs to the cooking liquid and cook them hard for up to 15 minutes. The longer they are in the cooking liquid the darker in color they become. A safe and inexpensive way to color eggs.
Besides beet for the red color of course, other vegetables are also suitable for coloring. If you want to color the eggs blue then use red cabbage or berries. On a white eggshell this gives the desired effect. On brown eggs this gives a green color. Green is achieved with parsley or spinach. Or nettles. Coffee and tea give a brown color. Orange eggs of course with carrot juice and yellow with turmeric or curry powder. Good luck!
